Mezcal's Homemade Guacamole

Halve 3 avocados, remove pit and scoop flesh from skins
Into the molcajete

Squeeze the juice of 2 limes into the avocados

Add 2 tablespoons of diced yellow onion, 3 tbs diced tomato, 1 tbs of chopped
cilantro & 1tbs of diced jalapeno pepper

Add ¾ teaspoon kosher salt & a pinch of fresh ground black pepper

Using wooden spoons, chop & mash the mixture together until well
blended & semi smooth but maintaining chunks of avocado

Served with fresh cooked corn chips
